Not that I am aware. I don't know anything about Ruby, but I wouldn't
expect great performance from any large interpreter.
Is ruby built with standard GNU ./configure? If so, find one of the
examples in the uClinux-dust/user tree of applications that are
cross-compiled in this way, it's pretty easy to do.
I think uClinux-dist/user/eth-tool is one example, there are plenty of
